2016…

2016 was an interesting year. A lot of good mixed in with some bad. It was a bit of a roller-coaster. Looking back through photos of the year is always therapeutic for me though…reminding me of all the good times. I am very much looking forward to some new adventures in 2017! Cheers to everyone I had the pleasure of working with this year and to all my friends and family. May this year be filled with love, laughter, and new memories.

bahn mi burgers…

I’ve been meaning to post this for quite some time. If for nothing else, to write down what exactly I put in them. (as I tend to not follow recipes). I had great intentions of photographing all my favorite dishes and putting them all on here for my own personal recipe book…but that has somehow fallen short. I need to get back into photographing food. I am not sure where my inspiration has gone lately. I hope it finds it’s way home soon…

Anyhow, these are amazing. Really. A friend of mine in Munich had turned me onto the flavorful Vietnamese Bahn Mi sandwiches some time ago and I have perfected a (abeit very ‘merican) version of my own. And holy shit, let me tell you…you shall not be disappointed.

Bahn Mi Turkey Burgers

Here we go… and please pardon my lack of exact measurements. I rarely measure. (It’s why I don’t bake)

Ingredients:

(For Burgers)

Equal parts ground turkey and ground pork

1 Egg

1 Tbsp Minced Garlic

1 Tbsp Ground Ginger

2 Tbsp Soy Sauce

2 Tbsp Fish Sauce

2 Tbsp Teriyaki Sauce (Basically any asian sauces I had in the fridge)

1/2 Cup Green Onions (chopped)

Panko Bread Crumbs (enough to tighten it all together to make patties)

(Toppings) 

Siracha Mayo – combine mayonnaise with a few dashes of siracha sauce

Sliced Pickled jalapenos

Sliced Cucumber

Shredded Pickled Carrot and Radish (I buy this at my local asian market, but you can also make it yourself.)

Fresh Cilantro

– Combine all burger ingredients and divide into 6oz patties. Grill burgers until cooked through. Toast or grill (in pan) whole wheat buns and set aside. Prepare all toppings and pile all ingredients together! Enjoy :)
